Delicious, moist, perfection.

What you'll need:

1/2 cup salted butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 t baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 t salt

Preheat oven to 375 degrees.  Grease an 8 inch square pan.

Melt butter in large skillet.  Remove from heat, and stir in sugar.  Dump into a medium bowl, and quickly add eggs, beating until well blended.  In a separate bowl, combine buttermilk with baking soda, and stir into butter mixture.  Stir in cornmeal, flour, and salt until well blended and few lumps remain.  Pour batter into the prepared pan.

Bake in the preheated oven for 30-40 minutes, or until toothpick inserted in the center comes out clean.  Mine had already started to get dark at the edges by 30 minutes, so keep an eye on it for burning. 



  1. This is amazing! Just yesterday I was browsing for cornbread recipes because I saw Nigella making some chili with cornbread baked on top and it looked delicious. Anyway, I read some reviews of the recipe and decided not to bake the cornbread on top of the chili because sometimes it absorbs much of the chili sauce. So this recipe comes in a perfect timing! i just have to find buttermilk (not a common product here in portugal).

  2. Hi there! I've never tried it because buttermilk is readily available in the US, but apparently you can make your own by combining regular milk and vinegar - here are more detailed instructions!
